Easy Summer Fruit Parfaits
Breakfast really doesn’t get easier than spooning layers of yogurt, fruit, and granola into a cup.
These healthy breakfast parfaits only take a couple of minutes to make in the morning. So whether you’re rushing off to work, or just looking for an effortless summer breakfast to enjoy in your pajamas, they’re an easy win.
I’ve been keeping double batches of my 20 minute homemade granola on hand for breakfasts and snacks. I omitted the raisins for this recipe and we loved it!
These summer fruit parfaits can also be made ahead and stored in the fridge overnight for a grab and go breakfast or lunch. If you’re making them in advance, I’d suggest saving the top layer of granola for sprinkling on just before serving.
Fruit and Yogurt Parfaits – a Healthy and Hearty Breakfast for Busy Mornings
I love simple breakfasts like this that give us more time to spend soaking up the summer sun and enjoying our time together.
But I also realize that Back To School time will be here before we know it, and I’ll be glad to have this healthy and satisfying recipe for quick breakfasts and school lunches when that time comes.
The protein and healthy fat from the whole milk yogurt gives this breakfast the staying power to keep my school girl needs to hold her over until the next meal.
And the flavor combinations are endless, which means she won’t get bored with it – any fresh fruit can be substituted for the peaches and berries, and other flavors like raw honey, pure maple syrup, cinnamon, or vanilla can be stirred into the yogurt.

- Layer the yogurt, berries, and granola in cups or bowls. Drizzle with honey or maple syrup if desired.
These can be made ahead and stored in the fridge - just leave off the top layer of granola, then add before serving.
