Last week we talked about veggie-loaded dinners. Today we’re packing in the greens at breakfast too with this Peach Pineapple Green Smoothie!
And stay tuned because, later in the week, I’ll share a new, fast and easy sandwich recipe to help you get more veggies on your lunch plate!
Fresh Summer Peaches
Who doesn’t love a ripe, summer peach – the kind you can smell even before bringing them to your nose, and that drip sweet peach juice down your arm when you bite into them?
Every summer we look forward to dripping, sweet peaches from the Texas Hill Country. And, now that July is here, local peaches are flooding the markets!
Every week, I tell myself we don’t need that many peaches, and every week I buy all those and a few more because, who knows if they’ll still be there next week and I’ll have to regret not having bought more for the next 11 months?
Peach Pineapple Green Smoothie
Green smoothies are one of the best ways to get my kids to eat vegetables at breakfast…and not many breakfasts are as fast and easy to make! I love that I can toss everything in the blender and have the whole family’s breakfast ready in just a few minutes!
Then there’s the health factor – this refreshing summer smoothie is made from 100% fruits and vegetables, has only 3 ingredients, and is dairy free, for those need it.
I almost always use baby spinach in my green smoothies because of its silky smooth texture when blended. (Learn 10 reasons why spinach should be the #1 vegetable in your kitchen!)
We all like a smooth smoothie, but it’s especially important with the younger crowd.
Every mom knows that, for a recipe to gain “kid-approved” status, you have to get it right in the flavor, color, and texture departments! This peach pineapple green smoothie ticks all three boxes.
**Mom Tip: If you want bonus points with the kids, give it a fun name too!**
