Lemon Vinaigrette

Ingredients

  • ¼ cup white vinegar
  • Juice of 1 lemon 3-4 Tbsp
  • ½ cup or less honey or pure maple syrup
  • Salt and pepper to taste
  • 1/3 cup avocado or olive oil

Instructions

  • Whisk together all ingredients except oil.
  • Gradually add oil, whisking constantly, to form an emulsion.
  • Store in airtight container in refrigerator.

Notes

The sweetness of this recipe can easily be adjusted by altering the quantity of honey/syrup.
For an Asian flair, use sesame oil in place of avocado/olive oil.
