Beet Berry Smoothie

The color of this smoothie is just gorgeous, thanks to the beets; if you dislike beet, substitute dark cherries or any type of berry.

Ingredients

  • 4 oz cran-apple or pomegranate juice
  • 2 oz coconut milk or additional juice
  • ½ large avocado peeled and pitted
  • 2 cups strawberries
  • 1 small beet greens removed & cut in half (or ½ cup other berries)
  • 1 stalk celery
  • 2-4 oz water as desired
  • 1 handful ice cubes

Instructions

  • Place ingredients in blender in order listed (liquids on bottom), then whirrrl!
  • (If you don't own a Vitamix or other high powered blender, you may need to chop ingredients into smaller pieces before blending.)
