Easy Chocolate Peanut Butter Pudding Parfaits {with Dairy Free option}

Layers of rich and creamy no-cook pudding, topped with lightly sweetened whipped cream. Made with avocado, coconut milk, peanut butter and honey - it's a dessert you can feel good about too!

Ingredients

Chocolate Pudding Ingredients

  • 1 1/2 cups coconut milk
  • 3/4 cup honey
  • 1 tsp vanilla
  • 2 large avocados peeled and pitted
  • 1/2 cup raw cacao powder increase to 3/4 cup for darker chocolate

Peanut Butter Pudding Ingredients

  • 1 1/2 cups coconut milk
  • 1 cup peanut butter
  • 1/2 cup honey
  • 1/2 tsp vanilla

Sweetened Whipped Cream Ingredients

Optional Garnish

  • Crushed peanuts chocolate shavings or chopped chocolate-peanut butter cups

Instructions

Chocolate Pudding Directions

  • Place all ingredients in Vitamix (liquids on bottom) and blend on low for 20 seconds, then medium speed for another 30 seconds.

Peanut Butter Pudding Directions

  • Whisk all ingredients together in a mixing bowl until creamy.

Sweetened Whipped Cream Directions

  • Whip the cream until slightly thickened. Add maple syrup and vanilla and continue beating until soft peaks form.

To Assemble the Parfaits

  • Layer the pudding (chocolate, PB, chocolate) in small glasses or parfait dishes.
  • Top with whipped cream and chill for a few minutes or up to 3 days in the fridge.
  • Add garnish immediately before serving.

Notes

These can be made dairy free by substituting coconut cream for heavy cream (purchase ready-to-use coconut cream or skim the thick cream layer off the top of a can of coconut milk that has been allowed to sit undisturbed overnight to allow layers to separate; the coconut water layer can be reserved for another use).
