Prep Time 5 minutes

Total Time 20 minutes
Servings 8

Ingredients

  • 3 1/2 cups or more whole wheat flour
  • 4 tsp baking powder
  • 1/2 tsp sea salt
  • 1 1/2 cups plain whole milk yogurt
  • 1/2 cup pastured butter softened (I use salted butter)
  • 3 Tbsp raw honey
  • 1 egg + chia seeds for sprinkling

Instructions

  • Preheat oven to 375 degrees.
  • In a large mixing bowl, mix the flour, baking powder, and sea salt.
  • In a small bowl, combine the yogurt, butter and honey, then add to the dry mixture and stir until just combined.
  • Use clean hands to knead the dough until all ingredients are well incorporated. Add additional flour as needed until dough can be rolled into balls.
  • Form 8 balls of dough, place on parchment lined baking sheets (I use two sheets for fast, even cooking). Gently press down on the top of each ball to flatten slightly into a bun shape.
  • Lightly beat the egg and use a pastry brush to brush over the surface of each bun. Sprinkle chia seeds on top.
  • Bake for 15 minutes or until surface is firm and very lightly golden (these won't brown much).
  • Remove from oven and allow to cool before slicing.

Notes

This makes 8 medium sized or 6 large buns. The same recipe could be used for dinner rolls or hot dog buns as well!
