Easy Strawberry Chia Jam

Ingredients

  • 3 cups sliced or quartered strawberries fresh or frozen
  • 3/4 cups raw honey
  • 1/4 cup fresh lemon juice
  • 1/3 cup chia seeds

Instructions

  • 1. Bring berries and honey just to a boil in saucepan over medium heat.
  • 2. Reduce to a simmer and continue to heat for about 15 minutes.
  • 3. Add lemon juice and continue heating for a few more minutes.
  • 4. Remove from heat and use an immersion blender or potato masher to puree/mash berries to desired size.
  • 5. Stir in chia seeds and allow mixture to cool before transferring to glass jars. Store in refrigerator.

Notes

Once chilled, the mixture will thicken to a jam like consistency. Will last a few months in the fridge.
