Easy Strawberry Chia Jam

Ingredients
3
cups
sliced or quartered strawberries
fresh or frozen
3/4
cups
raw honey
1/4
cup
fresh lemon juice
1/3
cup
chia seeds
Instructions
1. Bring berries and honey just to a boil in saucepan over medium heat.
2. Reduce to a simmer and continue to heat for about 15 minutes.
3. Add lemon juice and continue heating for a few more minutes.
4. Remove from heat and use an immersion blender or potato masher to puree/mash berries to desired size.
5. Stir in chia seeds and allow mixture to cool before transferring to glass jars. Store in refrigerator.
Notes
Once chilled, the mixture will thicken to a jam like consistency. Will last a few months in the fridge.
