Ingredients for the Crust
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 tsp sea salt
  • 1/3 cup cold butter diced
  • 1 pastured egg
  • 1 Tbsp pure maple syrup
  • 1 tsp apple cider vinegar
  • 1/2 Tbsp melted butter
  • Coarse grain sugar or maple sugar for sprinkling optional

Instructions for the Crust
  1. Preheat oven to 375 degrees.
  2. Mix almond flour, coconut flour, and sea salt in food processor.
  3. Add cold butter and pulse until course crumbs form.
  4. Add egg, maple, and vinegar, and mix until a moist dough forms.
  5. Press into a 9.5 inch tart pan, place on a baking sheet, and bake for 10 minutes or until crust just begins to brown.
  6. While crust is baking, place peaches and blueberries in a medium mixing bowl.
  7. In a small bowl, stir together the maple syrup, melted butter, and vanilla extract. Pour over the fruit and use a spatula to gently combine. Arrange the peach slices around the tart shell, then pour the blueberries and remaining syrup mixture into the baked tart shell (still on the baking sheet).
  8. Sprinkle sliced almonds over the fruit mixture.
  9. Use a pastry brush to brush the reserved melted 1/2 Tbsp butter around the edge of the pastry crust, sprinkling granulated sugar or maple sugar on top if desired.
  10. Bake for 15-20 minutes or until fruit is soft and crust is a light golden brown.
  11. Allow to cool completely before slicing and serving with desired toppings.
  12. Serves 6-8
