5 Minute Veggie Sandwich with Hummus and Feta


  • Sliced sourdough bread Cut larger slices in half
  • Red pepper hummus
  • Veggies of choice I used cucumbers, tomatoes, sprouts, yellow bell peppers, and avocado
  • Sea salt and black pepper if you want
  • Crumbled feta cheese
  • Fresh cilantro


  • Toast the sourdough, then spread a generous amount of hummus on each slice.
  • Stack the vegetables, sprinkling with sea salt as you go.
  • Add the feta and cilantro and serve.
