Tropical Kale Smoothie

The best "green smoothie" you'll ever taste!

Ingredients

  • 6 oz pineapple juice
  • 1/4 to 1/2 cup coconut milk
  • 3 large handfuls baby kale* or spinach
  • 2 cups pineapple chunks
  • ½ banana
  • 1 handful ice cubes
  • * Kale is considered goitrogenic and can interfere with thyroid function when eaten raw. For those with thyroid dysfunction consider boiling the kale for several minutes to remove the majority of the goitrogens. If possible, do this step in advance so it has time to chill before adding to the smoothie.

Instructions

  • Place ingredients in blender in order listed (liquids on bottom), then whirrrl! (If you don't own a Vitamix or other high powered blender, you may need to chop ingredients into smaller pieces before blending.)
