Slow Cooker Chicken Noodle Soup

My favorite homemade chicken noodle soup recipe - It's full of savory richness, it's cheap, it's easy, & it cooks itself!

Ingredients
  • 4 cups homemade chicken stock or broth
  • 3 cups water
  • 1 cup chopped onion
  • 2 large cloves garlic minced
  • 1 cup sliced carrot
  • 1 cup sliced celery
  • 1-2 bay leaves
  • 1/2 tsp dried thyme
  • 1 Tbsp salt
  • 1/2-1 Tbsp black pepper or to taste
  • 1 small roasting chicken approx 3 lbs
  • 2 cups orecciete pasta
Instructions
  1. Place all ingredients except chicken and pasta in slow cooker.
  2. Add chicken, cover, and cook on high 4-5 hours or until internal temperature is 165 degrees.
  3. Transfer chicken to cutting board.
  4. Remove bay leaves and discard.
  5. Turn slow cooker to Low, then add pasta and cover, allowing it to cook for 15-20 minutes while chicken is being shredded.
  6. Remove and discard skin and bones from chicken. Shred the meat, add additional salt and pepper if desired, and return chicken to soup to serve.
  7. Top with a crack of freshly ground black pepper.
