Creamy Strawberry Beet Smoothie Nutrition
This smoothie doesn’t just taste great and look gorgeous – it’s good for you too!
- Vitamin C – Each serving provides over 100% of your daily needs!
- Antioxidants – Anthocyanins, Quercetin, and Betalin are just a few of the phytonutrients in this smoothie that have antioxidant benefits.
- Protein – Each serving has about 6 grams of protein to help slow the digestion of carbs in the smoothie. Boost the protein even more by adding additional collagen or by swapping out the coconut milk for a higher protein milk like cow’s milk or goat’s milk.
- Gut healthy & high protein collagen – Collagen hydrolysate is the non-gelling form of gelatin, and the glutamine and other amino acids in it are great for healthy gut, skin, hair, nails, and joints. Plus it’s a great source of protein.
- Fiber – Each serving has about 5 grams of fiber. Boost the fiber by adding rolled oats or ground flax/chia seeds.

How to Make Creamy Strawberry Beet Smoothie in 3 Easy Steps
Do we really need step by step instructions for making a smoothie? Probably not, but here goes. ๐
Gather your ingredients. Place everything except the ice in the blender in the order listed. Blend until smooth, then add the ice and blend again.
Pour into pretty glasses and top with chia seeds.
Tips for Making Creamy Strawberry Beet Smoothie
- This smoothie has a light beet flavor that’s well balanced by the dates and strawberries. If you’re not a fan of beets, you can decrease the amount to 1/4 cup and will hardly notice them.
- To make this a green smoothie, add a large handful of baby spinach – just know the color will change.
- Any milk can be used in place of the coconut milk.
- Each 11 oz serving has approximately 6 grams of protein, but you can add more collagen to increase the protein.

Creamy Strawberry Beet Smoothie
Ingredients
- 1/2 cup organic coconut milk (or other milk of choice)
- 1 1/2 cups fresh strawberries, stems removed
- 1/2 cup canned beets, drained (can substitute fresh beets)
- 1-2 Medjool dates, pitted
- 2 Tbsp collagen hydrolysate (can double this for more protein - just add 1-2 Tbsp water if it's too thick to blend)
- 1 heaping cup ice
Optional garnish
Instructions
- Place all ingredients except ice in blender, in order listed. Blend on medium, then on high until smooth. Add ice and blend until smooth. Serve immediately, topped with chia seeds (optional).
